São Mamede Wine Project

São Mamede Wine Project is rooted in the wild borderlands of Portugal and Spain. Our work spans a permaculture farm in the foothills of Marvão, the natural wine bar Bar Salto with its guesthouse Casa Salto del Caballo just across the border in Spain, and a vineyard in Portugal, at 600m altitude. Our wine school weaves these three places together, offering learning and tasting experiences that cross borders and bring the character of this land to life. Together, they form a living ecosystem where natural wine, vegetarian food, fermentation, and community experiences reflect the unique spirit of the borderlands. Our mission is to share true terroir and the stories of this place through every glass, meal, and gathering.
